Eating healthy is hard any time of year but especially hard during the holidays, my suggestion before you head out to a gathering, is to eat a small healthy snack (a small handful of nuts or a piece of fruit) before you head out to avoid overeating.

Offer to bring a dish, contribute a healthy option like a veggie platter or fruit-based desert so you know there is something nutritious to enjoy.

Healthy Cucumber Smoked Salmon Bites

These delish smoked salmon cucumber bites are the perfect low carb holiday appetizer. Each cucumber is scooped out and filled with cream cheese red onion salmon and topped with a sprig of dill! Perfect!

3 English cucumbers ends trimmed

3/4 cup whipped cream cheese

12 ounces of smoked salmon or nova lox

1/4 cup chopped red onions, green onions or chives

1 Tablespoon of fresh dill plus more to garnish

In a medium bowl combine cream cheese 1 tablespoon dill and red onions until combined.

Peel cucumbers leaving strips of green, then cut 1/2 inch thick slices.

With melon baller or small spoon scoop out shallow pocket in center of each slice being careful not to go all the way through.

Spoon a tablespoon of cream cheese mixture on top of each cucumber slice, place a 1-inch square of salmon on top and garnish with a small piece of dill.

place in a airtight container and chill till ready to serve or refrigerate for up to 24 hours then serve. Enjoy!


Dark Chocolate Treats

Who doesn’t love chocolate? these are very versatile you can omit the pistachios or orange zest or even the pomegranate seeds and swap for something else like no pistachios try flakey sea salt just a very small pinch though! Or swap out the pistachios for almonds I hope you like these!

12oz. dark chocolate chips or your favorite chocolate bar

1/2 c pomegranate seeds

2 Tablespoons orange zest

1/4 c pistachios finely chopped (omit if your concerned about nut allergies)

  • Layout a piece of parchment paper
  • melt the chocolate in a double boiler on the stove or the if you prefer microwave in 30 second intervals stir after each interval until melted
  • using a spoon spread about a 1-1/2 inch disk on the parchment
  • sprinkle each disk with some pomegranate seeds orange zest and pistachios
  • refrigerate for 30 minutes or until hardened
  • this recipe makes about 12
